A nice Russet, baked firm but soft, with crispy skin, sliced opened, with butter, a dash of salt and pepper, sour cream, chives, grated Cheddar Cheese and sprinkled with bacon bits ....mmmmm....skin and all. Which is what I had for dinner last night.
